Domed Cupcakes With Spring Flowers And Birds

I meant to try making domed cupcakes for a while now, and finally the day has come.

It was my friend’s birthday, so I just thought it is a good opportunity to give it a go.
I wanted to decorate the little cakes in a theme that suits the season, that’s why I chose to make blooming trees and birds.

The cake is a simple vanilla sponge but under the fondant cap there is a good amount of white vanilla chocolate cream that makes it really delicious.

Maria’s Christening Cake

I made this cake as a gift for a 2 months old little girl called Maria. She is the daughter of our friends, and we were invited to her christening in Cambridge on Easter Sunday. (By the way, no cakes and cupcakes made for this Easter, because I literally had no time to do anything else surrounded with my 3 kids…. 🙂 )

I baked two round cakes of two different sizes and stacked them on top of each other. I used an old sponge cake recipe, using only 8 eggs + 8 full table spoon of plain flour + 8 full spoon of brown sugar, and that’s it for the cake.

To make the filling I made a white chocolate ganache using 600 ml of double cream + 300 g of white chocolate + pink gel colour.

I covered the cake first with a layer of delicious almond marzipan then finally with white fondant.

I made the butterfly on top from royal icing with the technique called Australian Lace. 

 

Raspberry Cupcakes With Caramel Chocolate Cream

Fresh, sweet raspberry with caramel it’s a very good combination. I’m glad I had the initiative to give it a go.

I baked a batch of my favourite vanilla recipe with adding 200 g of fresh raspberries.

The cream is caramel chocolate melted in double cream. To finish the cake I piped a little whipped cream on top of the caramel cream and I decorated it with paper roses.

 

 

Ballerina Cupcakes

Girly, feminine, romantic, delicate, subtle…..this is how we could describe a ballerina.

I had these little ballerina stickers, well my daughter had them from Hobby Craft, and since she had played with only a few, I put the rest away to use them as cupcake toppers.

I think these would look great on a Ballerina Birthday Party of any little girl, and I may actually use the theme and the idea later when my youngest girl will get to the stage of liking ballet.
