My friend’s Mum came to visit her from Chile this winter. She celebrated her birthday here in the UK. Laura asked me to make a birthday cake for her Mum, Maria Ines. She especially requested for a certain recipe and for a decoration with daisies as those are her mother’s favourite flowers.
For this cake I baked my favourite chocolate cake recipe (scroll down a bit for the recipe). After cooling down completely, I crumbled all up and mixed it with the followings:
-100 gr chopped pecan nuts
-100 gr good quality dark chocolate (melted)
-few tablespoon of Rum (as much as you wish really)
-in the end pour heavy cream to it depending on how much is needed
You need to make a dough out of all these ingredients. Shape it into a cake of your choice then put a plastic wrap around it and put it in the refrigerator for 1 or 2 days! Honestly, this cake taste better after leaving it in the fridge for few days, so it’s brilliant that you can make it in advance of any occasion.
This cake will be very dens, chocolaty with nuts and Rum. No filling is needed and it will be too heavy to hold the filling anyways.
To bake the chocolate cake:
-1 cup water
-5 Tbsp cocoa powder (unsweetened)
-2,5 cup all-purpose flour
-1 cup brown sugar
-2 Tbsp bicarbonate of soda
-1 little natural yogurt (without any flavour)
-1 tsp vanilla extract
-1 tsp baking soda
-200 gr butter (unsalted)
-1 tsp almond extract
-juice squeezed from 1/4 orange
-100 gr dark chocolate roughly chopped
Preheat the oven, then
1. Put the water, cocoa powder and butter in a pan and stirring it, bring it to boil on the stove, then put it aside to cool down.
2. Mix the flour, salt, bicarbonate of soda, baking soda and sugar in a bowl. Stir in the water with the butter and chocolate, add the eggs, vanilla extract, almond extract, orange juice, yogurt, and finally the chopped chocolate. Stir everything just only until all is combined.
3. Pour the batter in your cake tin (doesn’t matter what size or shape) and bake for about 20 minutes or as long as you think is needed untill ready. Leave it to cool in the tin for 5 more minutes before taking the cake out on a tray. Let it cool completely.
I made the decorations from sugar-paste. I loved how these daisies came out and when my daughter saw them she begged me to make her a daisy cake too only pink 🙂
I haven’t made her cake yet but I already made her pink daisies and they are just waiting to be used!
