Dana’s Kit Kat Birthday Cake

I need to apologize for the quality of these pictures, but sadly my husband didn’t had the chance to take good pictures -as he usually does, but he wasn’t home and I just took some photos for documentation with my own little camera.

This is a chocolate sponge cake filled with milk chocolate ganache cream and wrapped all around with Kit-Kat chocolate bars for my friend Dana’s birthday. Flowers are made from sugar-paste.

Daisy cake for my friend’s Mum

My friend’s Mum came to visit her from Chile this winter. She celebrated her birthday here in the UK. Laura asked me to make a birthday cake for her Mum, Maria Ines. She especially requested for a certain recipeย and for a decoration with daisies as those are her mother’s favourite flowers.

For this cake I baked my favourite chocolate cake recipe (scroll down a bit for the recipe). After cooling down completely, I crumbled all up and mixed it with the followings:

-100 gr chopped pecan nuts

-100 gr good quality dark chocolate (melted)

-few tablespoon of Rum (as much as you wish really)

-in the end pour heavy cream to it depending on how much is needed

You need to make a dough out of all these ingredients. Shape it into a cake of your choice then put a plastic wrap around it and put it in the refrigerator for 1 or 2 days! Honestly, this cake taste better after leaving it in the fridge for few days, so it’s brilliant that you can make it in advance of any occasion.

This cake will be very dens, chocolaty with nuts and Rum. No filling is needed and it will be too heavy to hold the filling anyways.

To bake the chocolate cake:

Ingredients:
-1 cup water

-5 Tbsp cocoa powder (unsweetened)
-2,5 cup all-purpose flour
-1 cup brown sugar
-2 Tbsp bicarbonate of soda
-1 little natural yogurt (without any flavour)
-1 tsp vanilla extract
-1 tsp baking soda
-2 eggs
-200 gr butter (unsalted)
-1 tsp almond extract
-juice squeezed from 1/4 orange
-100 gr dark chocolate roughly chopped
-salt
Preheat the oven, then
1. Put the water, cocoa powder and butter in a pan and stirring it, bring it to boil on the stove, then put it aside to cool down.

2. Mix the flour, salt, bicarbonate of soda, baking soda and sugar in a bowl. Stir in the water with the butter and chocolate, add the eggs, vanilla extract, almond extract, orange juice, yogurt, and finally the chopped chocolate. Stir everything just only until all is combined.
3.ย Pour the batter in your cake tin (doesn’t matter what size or shape) and bake for about 20 minutes or as long as you think is needed untill ready. Leave it to cool in the tin for 5 more minutes before taking the cake out on a tray. Let it cool completely.

I made the decorations from sugar-paste. I loved how these daisies came out and when my daughter saw them she begged me to make her a daisy cake too only pink ๐Ÿ™‚

I haven’t made her cake yet but I already made her pink daisies and they are just waiting to be used!

Rose Water Cupcakes

Finally made them!

I was looking for rose water for some time and then suddenly Tesco started to sell it. I was very excited to bake the rose water cupcakes BUT….. they didn’t came out the way I expected. I don’t know… they were just not that extravagant as I expected…. Could be that my expectations were too high but since roses are so elegant and beautiful flowers and smelling soooo amazing I thought that a cake with rose water essence must be just as delicious and special as the flowers themselves. Or, maybe the recipe was not the best…that’s always possible!

Anyway, the look of these cupcakes pleased me a lot, and I had fun making the sugar-paste roses. All in all I don’t regret a minute of what I spent with them.

I thought about sharing the recipe I used but decided better not because as I said I wasn’t completely satisfied with the outcome, so if you are looking for a great rose water cupcake recipe then just keep on looking until you find the best for you.

Venetian Carnival

As February is the Carnival season in Venice, Italy I made an attempt to create some cupcakes that gives you an idea about what this is really. I have been to Venice although not in February but full summer and I was very much impressed about everything. We had a lovely holiday with our friends in Spain but we spent a night camping in Venice.

This is a simple vanilla cupcake decorated with vanilla butter-cream. The decoration comes from Hobby Craft. I found these tiny carnival masques by accident few months ago when looking for something else but bought them to make these cupcakes in February ๐Ÿ™‚

Valentine’s Day cakes

Happy Valentine’s everyone! ๐Ÿ™‚

I have this little cake tin with heart shapes that I got from my Mother last summer. I thought it would be perfect for making mini cakes for Valentine’s. I used lots of chocolate, cocoa powder, chopped nuts and Rum.

I also made some cakes in a different mould just to try out how it would look. I think it looked very pretty.

Just so you know Valentine’s Day is not over yet but we haven’t got any more cakes left, we eat them all already ๐Ÿ™‚

It’s a GIRL! Hurray!!!

It’s been quite a long time since I last came here and posted anything. I had my reasons of course…First of all there has been a big discovery within the family which is that we are expecting a new baby! Totally unexpected but Hey, I guess this is what life is all about: unexpected things can be expected to happen any time! And that’s exactly what happened to us with this baby.

Now everything seems to have settled and we are looking forward to it. My Daughter was super excited of the prospect of having a new sibling and she was absolutely sure that she’ll have a baby sister this time. And guess who was right? Yes, it’s a GIRL! Now we have some issues finding a name for HER but I’m sure we will come up with something eventually.

This batch of cupcakes I made especially to break the news of the sex. I made them 3 weeks ago, when I was 20 weeks pregnant, that makes me 23 weeks now, still a long way to go…

For the Christmas holidays we’ve been away at my in law’s, so I didn’t bake too much in the past weeks. Also because I need to watch my weight and with lots of cakes around me it would be impossible, specially that I have a really sweet tooth in this pregnancy! So that means I probably won’t bake as much as normally would in the coming months too.

But who knows, maybe I will ๐Ÿ™‚
